Cabo Azul, Nicaragua
A second limited and fun run from Nicaragua, we have the Cabo Azul. We don’t have much of it, but wanted to bring in what little we could snag! Some of the tastes you can expect include lemon and sweet tropical notes, as well as a savory and sweet peach flavor. Coming from a very small farm with only 314 hectares planted, there is a high attention to detail and focus on the quality and land. The Morales and Fernandez family converted their farm in 2000 from a cattle farm. An interesting fact about this farm is that one of the varietals, H1, which is high yield and resistant to disease, must be propagated similar to apples as the seeds do not typically have the characteristics of their parent plants!
