The mountain slopes in the Chiapas region of Mexico provide a great growing environment. The coffee itself is produced in a fashion similar to other centrally grown coffees: washed and then patio dried. In the cup, this coffee packs a ton of chocolatey-orangey flavor in, and then becomes floral and herbaceous as it begins to cool. While this coffee is a crowd pleaser, it has several layers that make it worth sipping and thinking about. This coffee shines particularly well in a filtered drip so that all the flavors can really shine.
