San Diego Jaguar, Tarrazu, Costa Rica

Beneficio San Diego is one of the most modern mills currently operating in Costa Rica. It was established in 1888 and specializes in processing coffees in the Tarrazu region. They also work to ensure healthy community relations and an ever-increasingly sustainable production. This particular process is known in Costa Rica as being “honeyed.” This is when the coffee cherry and other parts of the fruit are left on during the initial drying stage, which gives this coffee more fruit and acidic characteristics. We chose this coffee because it strikes a wonderful balance of modern production and classic Costa Rican flavors… we like to imagine cutting into a fresh pastry as we sip this coffee!
